Nothings better than cooking your catch fresh from the Ocean. In this episode of Adreno's Cook your Catch series, spearo Ged Clarris @ged_clarris runs us through his favourite recipe, Mangrove Jack Makan Tangan - a camp site favourite.
If you're after a fast, easy and simple recipe that tastes absolutely amazing then you've landed in the best kept secret around!
Ingredients:
1 whole Mangrove Jack, cleaned and scaled
Salt and pepper, to taste
Vegetable oil, for frying
1 onion, rough cut
2 cloves of garlic, minced
Teriyaki Sauce
Lemon
Instructions:
Score 4-5 deep slices vertically each side of your Mangrove Jack. Season with salt and pepper on both sides, ensuring you get all the way through the cuts.
Heat a pan with approximately 0.5cm of oil. Once the oil is hot, carefully place the Mangrove Jack in the pan. Fry the fish for a few minutes on each side until the skin is crispy and the flesh is cooked through.
Once the Mangrove Jack is done, remove it from the pan and set it aside.
In the same pan, fry the onions and garlic until they are soft and translucent.
Serve the fish with the fried onions and garlic on top and give a splash of lemon and Teriyaki sauce. Enjoy the Mangrove Jack with your hands (Makan Tangan) and savour the taste of the fresh fish with friends and family.
